After the bike brief and participant introduction, we kick off the weekend with a fully guided ride, offering 2 riding options to suit all levels. Today’s experience embraces the mission of Farm to Fork with a ride that blends scenic beauty, regional history, and community connections. We’ll begin our journey all together with gently rolling hills through the heart of New York’s Hudson Valley. Our first highlight takes us past the historic Rosendale mines—once a thriving center of natural cement production. We’ll pause here to reflect on the landscape’s industrial legacy and the cool, shaded passageways that remain a living part of local history. After refueling at Davenports farm, participants will decide if they are up for the challenge of the long route or simply stroll and enjoy the scenery of the short route option. We all meet back at the Walkill RailTrail Café where we celebrate the completion of our first day with a real farm to fork lunch at a whimsical, woodsy café tucked just off the trail. This hidden gem serves up farm-fresh fare and local flavor, perfect for a midday recharge under the canopy of trees. As we make our way back to New Paltz we make one more stop along Huguenot Street, one of the oldest streets in America. Here, we’ll step back in time among stone houses dating back to the 1700s and learn about the early settlers who shaped this community. The rest of the day is yours to explore.

Today’s experience embraces the mission of Farm to Fork with a ride focused on visiting and supporting local farms and surrounding communities.
We will begin our journey after a quick bike brief before setting off on a scenic 40-mile loop. Participants will be offered the choice to shorten their ride to a 30-mile route at our designated decision point and still enjoy all the farm stops. Our first stop is Wild Hive Farm, where we’ll explore the world of regenerative grain farming and learn how sustainably grown and stone-milled grains support healthy soils, local economies, and artisan food traditions. Next, we roll into Clover Brooke Farm, a charming, family-run farm where we’ll meet alpacas, llamas, and goats—and learn about the farm’s fiber production, hands-on animal experiences, and educational programs that connect community to land. We’ll finish strong at Plan Bee Brewery, where we’ll raise a glass of farmhouse cider to celebrate our second day together. Relax, connect, and savor the moment—just be sure to save room for tonight’s fabulous Gourmet Signature Farm Dinner experience. Ride With GPS route map
